Thanksgiving is over...and you have turkey and mashed potatoes...probably some stuffing-coming out your ears! The pumpkin pie and sweets are a given-they'll be gone in a day or two, but everything else is either gonna be pitched or eaten for the next week...so why not make it fun!!

turkey, cut in bite sized pieces

All you do is layer the ingredients (in order) in a 8 or 9 inch square pan and bake at 350 until heated through (about 20 mintues). You can add or omit any of the ingredients and its still very delicious!!
Turkey vegetable soup
2-3 c. Turkey (shredded or cut small)
1 bag frozen mixed vegetables
2 stalks celery (diced)
1 bag coleslaw (shredded cabbage, carrots) without sauce
32 oz. chicken broth
4 potatoes, peeled and cubed
1 tbsp chili powder
1 tbsp paprika
1 small can tomato sauce
1 1/2 c ketchup
Put turkey, celery and coleslaw mix in large stock pan. Add broth and enough water to cover turkey and vegetables. Cook about 30 minutes or until celery and cabbage are done. Add frozen vegetables, potatoes, tomato sauce, ketchup, and spices. Cook about 1 hour or until vegetables and potatoes are tender. This is one of those recipes that is good when you make it but it is 10 times better when you reheat it!! Ray and Candace gave me this recipe and I've made it several times-using beef, chicken, and turkey. All are very delicious and leave plenty to freeze for later!!
Shredded Turkey Sandwiches
2 c. shredded Turkey
1 can cream of chicken or cream of celery
ritz crackers, crushed (if mixture is too thin)
Mix the turkey and soup mix. Add 3-4 crackers at a time, if it is too runny. Serve on buns...A variation of this recipe, using chicken in place of turkey is a very popular recipe in Ohio. It was always the first thing I would want to find when we went for a visit back to Ohio!! I was lost in NC when I went to the Dairy Queen and they didn't have a clue what I was talking about!!
Turkey Bacon Ranch Wraps or Sandwich
1 large wrap
sliced turkey breast
3 slices of ready made bacon
lettuce
tomato
shredded cheddar cheese
1 Tbsp. Ranch dressing
sliced avacado
Warm the wrap for 10-15 seconds. Spread the Ranch dressing, and layer the avacado, turkey, lettuce, tomato, bacon, and cheese. Fold both ends in then roll the tortilla. Cut in half and enjoy!! This is one of my favorite things to serve when friends stop by for lunch...its super easy and fast!!
